Ingredients:
- 1 box strawberry cake mix (Pillsbury recommended)
- 2 large eggs
- ⅓ cup vegetable or canola oil
- 1 teaspoon vanilla extract
For the glaze:
- ¾ cup powdered sugar
- 2 tablespoons strawberry preserves (Bonne Maman recommended)
- 1 ½ tablespoons milk
- 1 tablespoon cream cheese (optional, see tips!)
Instructions:
- Prepare: Preheat your oven to 350 degrees F. Spray an 8×8 inch baking pan with nonstick spray, or line it with foil or parchment paper for easier cleanup.
- Mix & Bake: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract until well mixed. Press the mixture evenly into the prepared pan. Bake for 18-22 minutes, or until the brownies are just set. Allow to cool completely in the pan.
- Frosting: While the brownies are cooling, whisk together the powdered sugar, strawberry preserves, cream cheese (if using), and milk in a small bowl until smooth. Spread this frosting over the cooled brownies.
Notes on Storing Strawberry Brownies
- Frosting Concerns: The strawberry frosting can cause the brownies to stick together, so it’s best to store them in a single layer in an airtight container. If you must stack them, place parchment paper between each layer to prevent sticking, although some frosting may still transfer.
- Refrigeration: If you’ve used the frosting, store the brownies in the refrigerator due to the milk and jam in the frosting. If unfrosted, they can be kept in an airtight container at room temperature.
