- 2 pounds chicken breasts, boneless & skinless
- 1.5 cups barbecue sauce
- 15 ounces canned crushed pineapple
Instructions
- Prep the Chicken: Dice the chicken breasts into approximately 1-inch cubes for even cooking.
- Combine Ingredients: Place the diced chicken in the slow cooker. Add the crushed pineapple and barbecue sauce. Stir well to ensure all pieces are evenly coated.
- Set and Forget: Cover the slow cooker and set to cook on low for 3.5 to 4 hours, or on high for 2 to 2.5 hours. If using frozen chicken, extend the cooking time by 30-45 minutes.
- Finishing Touches: Once the chicken is fork-tender and the internal temperature reaches at least 165°F (74°C), it’s ready. The sauce should be slightly thickened and bubbly.
- Serve and Enjoy: Carefully remove the lid, avoiding any steam. Serve the chicken hot, garnished with lime wedges and chopped cilantro if desired.
