- Preparation time: 20 minutes
- Chilling time: 1 hour total
- Serving: 12-16 bars
- Equipment: 8×8-inch baking dish
Ingredients:
Bottom Layer:
- 1 stick unsalted butter, cubed
- ⅓ cup brown sugar
- 3 tablespoons unsweetened cocoa powder
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- 2 cups graham crackers, finely crushed
- 8 oz sweetened coconut, shredded
- 1 teaspoon kosher salt
- ½ cup chopped nuts (walnuts, pecans, or almonds)
Cream Filling:
- 5 tablespoons unsalted butter, room temperature
- ¼ cup heavy cream
- 2 tablespoons white chocolate instant pudding mix
- 2 cups powdered sugar
Chocolate Topping:
- 1 cup semi-sweet chocolate chips
- 4 tablespoons salted butter
- Optional: ½ teaspoon kosher salt
Preparation:
- Prepare the baking dish: Line an 8×8-inch baking dish with parchment paper.
- Make the bottom layer: In a saucepan over medium heat, melt the butter. Remove from heat and whisk in the cocoa powder, brown sugar, and salt until well-blended. Gradually whisk in the beaten egg, mixing constantly to prevent curdling. Return to heat and cook, stirring frequently, until the mixture thickens, about 2 minutes. Remove from heat and stir in the vanilla, crushed graham crackers, coconut, and nuts. Press the mixture firmly into the bottom of the prepared dish. Refrigerate for 40 minutes to set.
- Prepare the cream filling: In a bowl, beat the room-temperature butter with heavy cream and instant pudding mix until smooth. Gradually add powdered sugar and continue beating until the mixture is creamy. Spread evenly over the chilled bottom layer. Return to the refrigerator for 20 minutes.
- Make the chocolate topping: In a microwave-safe bowl, combine chocolate chips and butter. Microwave in short bursts, stirring in between, until melted and smooth. If using, stir in the kosher salt. Spread over the cream filling. Chill in the refrigerator for another 30 minutes, or until the chocolate is set.
- Serve: Once set, lift the bars out of the dish using the parchment paper, cut into squares, and serve. Store any leftovers in an airtight container, using parchment paper to separate layers if stacking.
Nanaimo Bars offer a delightful blend of textures and flavors that make them a wonderfully indulgent treat. Enjoy this no-bake dessert that’s as fun to make as it is to eat!
