Instructions

  • Mix the Ingredients: In a large bowl, gently combine ground beef, French onion soup mix, breadcrumbs, milk, eggs, ketchup, and Worcestershire sauce. Do not overmix.
  • Prepare the Crockpot: Line the crockpot with parchment paper or foil for easy removal. Spread half of the meat mixture evenly on the bottom.
  • Layer the Fillings: Add caramelized onions and half of the Swiss cheese over the meat. This keeps the center moist and flavorful.
  • Top and Seal: Cover with the remaining meat mixture, pressing gently to seal the edges. This helps the cheese stay inside while cooking.
  • Slow Cook to Perfection: Set the crockpot on low for 6 hours or high for 4 hours until the meatloaf reaches 160°F (71°C).
  • Melt the Cheese: Sprinkle the remaining Swiss cheese over the meatloaf 10 minutes before serving and cover until melted.
  • Garnish and Serve: Let it rest for 10 minutes, then slice and serve with a sprinkle of fresh thyme for an added touch of flavor.
