Whether you’re a seasoned chef or a beginner cook, this recipe is a breeze to prepare, requiring only a handful of ingredients and minimal effort. The result? A mouthwatering meal that will have everyone asking for the recipe.

Storing Leftovers

If you’re fortunate enough to have leftovers, you can store them in an airtight container in the refrigerator for up to 3 days. To reheat, simply place a portion in a microwave-safe dish and heat it in the microwave until warmed through. Alternatively, you can warm it in the oven at a low temperature, covered with foil, to prevent it from drying out.

Kitchen Equipment Needed:

Before we dive into the cooking process, let’s make sure we have all the necessary kitchen equipment at hand. Here’s what you’ll need:

  • 9 x 13 baking pan
  • Medium bowl
  • Aluminum foil
  • Oven preheated to 350°F (175°C)

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute rice
  • 1 can of cream of mushroom soup
  • 1 can of cream of chicken soup
  • 1 can of water (use one of the soup cans for measurement)
  • 1 envelope Lipton onion soup mix
  • 1 tbsp butter

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures that the oven is ready to go once your casserole is assembled.
  2. Prepare the Casserole Dish: Take a 9×13-inch casserole dish and grease it lightly with butter. This prevents the ingredients from sticking and makes cleanup easier.
  3. Mix the Ingredients: In a medium-sized mixing bowl, combine the cream of mushroom soup, cream of chicken soup, Minute rice, and one can of water. Stir these ingredients together until they are well mixed, ensuring the rice is thoroughly coated with the creamy soup mixture.
  4. Assemble the Casserole: Pour the rice and soup mixture into the prepared casserole dish, spreading it out evenly. Then, lay the chicken breasts on top of the rice mixture, arranging them so they are evenly spaced.
  5. Add the Finishing Touches: Open the envelope of Lipton onion soup mix and sprinkle it evenly over the chicken breasts. This will add a delightful savory flavor and a slight crunch to the dish.
  6. Bake the Dish: Cover the casserole dish tightly with aluminum foil. This helps to trap the moisture, ensuring that the rice and chicken cook perfectly. Place the dish in the preheated oven and bake for 45-50 minutes. The dish is ready when the chicken is fully cooked through and the rice is tender.
  7. Serving: Once the cooking is complete, remove the dish from the oven and let it sit for a few minutes. This allows the flavors to meld together even more. Serve hot, and enjoy the creamy, comforting goodness of your Amazing Forgotten Chicken!

  1. I made this tonight, and the amount of leftovers is like a toddler size! I doubled the recipe and used Our Family rice & vermicelli
I also subbed two of the soups for one cup sour cream and about 1/4 c spur cream and chives cream cheese. It was delicious!
